Mango Cheesecake

Two favorite things in one! yummy mango in a cheesecake, does life get better than this?

Cheese Cake Base
 ½ Packet Granita Biscuits
 90 g Melted Butter
 ½ cup Chopped Walnuts
Cheese Cake Filling
 2 Large Mangoes
 250 g Cream Cheese
 300 ml Thickened Cream
 ½ cup Caster Sugar
 1 tbsp Gelatin

Crush biscuits, combine chopped walnuts with the melted butter then press the mixture firmly into the base of a 20cm round baking pan. Refrigerate for 30 min


Add one chopped mango, cream cheese, thickened cream and sugar in a food processor and mix till smooth


Combine the chopped second mango hand mix lightly leaving large mango chunks


Dissolve the gelatin with a 1/4 cup of boiling water, then cool to room temperature and combine with the cheesecake filling mixture


Fill the base with the cheesecake mixture and refrigerate for several hours or overnight till set
